What is hủ tiếu?
Hủ tiếu is southern Vietnam's favourite noodle soup: rice noodles in a clear, slightly sweet pork-bone broth with pork, shrimp or offal. Nam Vang (Phnom Penh) style is the best known; hủ tiếu gõ is the cheap street-cart version, named after the knocking sound vendors make.
